The creamery at Dos Hermanos ranch is located on the Rancho Cacachilas property in the mountains outside the capital city of Baja California Sur, Mexico. Designed and constructed in 2015, the kitchen is well-equipped to produce artisanal cheeses and to offer cheese making classes. The adjacent palapa provides a comfortable space for tastings, not only of cheeses but also of other products made at the ranch, such as honey, jams and burritos. From the rooftop terrace, visitors are invited to admire the views of La Ventana Bay, Isla Cerralvo (also known as Jacques Cousteau Island), the Sea of Cortez and the rugged Sierra Cacachilas mountains. By using bioclimatic architectural techniques and innovative bottle walls (see last photo below), we were able to recycle materials, reduce the usage of concrete, improve insulation, and enhance the construction's durability. As is true of all of our Rancho Cacachilas installations, these facilities are completely off-the-grid, operating in a self-sufficient manner without reliance on public utility services.
